Hello Everyone! I am delighted to begin this year on a sweet note.

It is hard enough to continue in lockdown, so I thought we need some cheering up! This Tiramisu is just the thing, simple enough to get all the family involved; it is delicious and really pretty too. I have used these cute cups I came across recently but if you prefer you can use pots or wine glasses or just a big dish.

Also, I am giving you the challenge of making your own ladies fingers, but don’t worry, you can buy them or use trifle sponge, whatever works best for you.

For the ladies fingers biscuits
5 egg yolks+75g sugar
5 egg whites+ 75g sugar
120g flour
30g cornflour

How to make
Whisk the egg yolk and sugar to ribbon stage, that is until thick and pale.
Whisk the egg white and sugar to peak stage, that is until thick like snow.
In a separate bowl and using a spatula, fold one-third of each, egg whites and egg yolk with the two flours. Once it is all well-blended fold in the rest of the egg mixtures until it is all incorporated to the flour mix.
Transfer to a piping bag fitted with a plain nozzle.
Pipe as required.
Bake in a preheated oven to 170C until lightly brown, remove from the oven and allow them to cool before using.

For the coffee syrup
334 ml ready-made coffee
16 ml brandy
56g sugar

Mix all together and set aside until ready to use.

For the cheese cream
223g mascarpone
28g sugar
112 ml egg
110 ml cream

In three separate bowls
Cream the cheese and the sugar together until smooth.
Whip the cream.
Whisk the eggs.
Then, fold the three mixtures together.

To assemble the tiramisu
Soak the biscuits in the coffee syrup.
Put one layer of cheese on top followed by another layer of biscuits.
The last layer should be of cheese.
Chill overnight or at least for a couple of hours.

To serve
Dust with cocoa powder and decorate with chocolate curls, amaretto biscuits or any way you like and enjoy.
