For a quick weekend recipe, try these super quick and delicious savoury muffins.
Ingredients to makes 12

  • 150g Brie, crumbled
  • 150g cooking chorizo, skin removed and cut into 1cm chunks
  • 300g plain flour, sifted
  • 2tsp baking powder
  • 1/2tsp bicarbonate of soda
  • Salt to taste
  • 1 handful chopped spinach
  • 225ml buttermilk at room temperature
  • 1 medium egg
  • 100g extra virgin olive oil

You will also need
I x 12 muffin tray, greased

Preheat the Oven to 190˚C
Cook the chorizo in a frying pan, over a medium heat for about 4 minutes, remove from the heat and put aside until needed.
Mix all the dry ingredients in a roomy bowl
Add the cheese, chorizo and spinach
In a separate bowl, mix the rest of the ingredients then add to the previous mix.
Stir everything together until just combined, do not over mix, spoon the mixture into the prepared muffin tray and fill to the rim.
Bake for about 20 minutes until golden brown and just firm.
Let them cool for a couple of minutes, then remove from the baking tray, serve hot or cold.

Tips
For a vegetarian option, use roasted peppers or sundried tomatoes instead of chorizo plus a hint of cayenne pepper or paprika to add extra flavour.
