This gorgeous pie is straightforward to make with simple ingredients and a perfect dessert for these cold winter days!

Ingredients
2 medium cooking apples, peeled, cored and chopped
100g chopped dates
100g roughly chopped walnuts
1tsp cinnamon
60g demerara or golden caster sugar
2 tablespoons maple syrup
1 x 320g ready-rolled puff pastry
2 tablespoons apricot jam + 1 tablespoon water

Instructions
Preheat the oven to 170C.
Mix the apples, dates, walnuts, sugar, cinnamon and maple syrup in a bowl.
For my lattice effect, I have used this tool which I bought online. if you don’t have it not to worry, simply proceed as for a normal pie and mark some lines on the top for a pretty look.
If you have the tool, only cut half of the pastry lengthwise (see the image above).
Place the apple mix on the other half of the pastry (see the image above).
Fold the lattice pastry over the apple and press the sides well to seal.
I bake mine on a baking tray lined with the same paper which the puff pastry comes rolled in.
Bake for about 30 minutes, until the pastry is golden.
Place the apricot jam and water in a small saucepan and bring to a gentle boil, brush the pie with this glaze when it comes out of the oven.
Allow it to cool slightly before serving.
You can serve the pie with vanilla ice cream, cream or custard.
